Creamy Butter Chicken

  • 34 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • 1 tbsp lemon juice
  • 2 tsp garam masala
  • 1 tsp cumin
  • Salt to taste
  • 4 tbsp butter
  • 1 medium onion, diced
  • 4 cloves fresh garlic, minced
  • 1-inch piece of ginger, minced
  • 1 can (14 oz) whole tomatoes
  • 1 cup heavy cream
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp paprika

Instructions

  1. Cut chicken into bite-sized pieces. In a bowl, mix yogurt, lemon juice, garam masala, cumin, and salt. Add chicken and marinate for at least 30 minutes.
  2. In a large skillet over medium heat, melt butter. Sauté diced onions until golden brown. Add minced garlic and ginger; cook until fragrant.
  3. Pour in canned tomatoes with juices. Simmer for about 10 minutes until thickened.
  4. Use an immersion blender to blend the sauce until smooth.
  5. Stir in heavy cream until well combined. Add the marinated chicken and cook for another 10 minutes or until fully cooked.
  6. Transfer to plates or bowls and drizzle with extra cream if desired. Serve with basmati rice or warm naan bread.
