- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 1 medium onion, finely chopped
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup uncooked long-grain rice
- Salt and pepper to taste
- Sauté Your Veggies: In a large pot over medium heat, add a dash of olive oil. Toss in the chopped onion, carrots, and celery. Sauté for about five minutes until soft and fragrant.
- Brown The Chicken: Add the boneless chicken breasts to the pot. Season with salt and pepper. Brown both sides for about three minutes each until golden.
- Add Garlic: Once the chicken is browned, add minced garlic and stir for about one minute until aromatic.
- Pour In Broth: Carefully pour in the chicken broth while scraping any flavorful bits off the bottom of the pan. Bring to a gentle simmer.
- Add Rice: Stir in the uncooked long-grain rice. Cover the pot and let everything simmer on low heat for around twenty minutes or until the rice is tender.
- Finish With Cream: Once the rice is cooked, reduce heat further and stir in heavy cream until well combined. Taste and adjust seasoning as needed before serving.
