  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup uncooked long-grain rice
  • Salt and pepper to taste

Instructions

  1. Sauté Your Veggies: In a large pot over medium heat, add a dash of olive oil. Toss in the chopped onion, carrots, and celery. Sauté for about five minutes until soft and fragrant.
  2. Brown The Chicken: Add the boneless chicken breasts to the pot. Season with salt and pepper. Brown both sides for about three minutes each until golden.
  3. Add Garlic: Once the chicken is browned, add minced garlic and stir for about one minute until aromatic.
  4. Pour In Broth: Carefully pour in the chicken broth while scraping any flavorful bits off the bottom of the pan. Bring to a gentle simmer.
  5. Add Rice: Stir in the uncooked long-grain rice. Cover the pot and let everything simmer on low heat for around twenty minutes or until the rice is tender.
  6. Finish With Cream: Once the rice is cooked, reduce heat further and stir in heavy cream until well combined. Taste and adjust seasoning as needed before serving.
