- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup plain yogurt
- 2 tbsp garlic and ginger paste
- 1 tsp salt
- 1 tsp cumin
- 1 tsp garam masala
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk or heavy cream
- 1 onion, diced
- 2 tbsp oil (for cooking)
- 2 tsp garam masala
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- Cut chicken breasts into bite-sized pieces.
- In a large bowl, mix yogurt, garlic and ginger paste, salt, cumin, and garam masala.
- Add chicken pieces to the marinade and let soak for at least an hour or overnight in the refrigerator.
- Heat oil in a skillet over medium heat.
- Add marinated chicken pieces and cook until golden brown on all sides (about 8-10 minutes). Remove from skillet.
- In the same skillet, add diced onion and sauté until soft and translucent (about 5 minutes).
- Stir in garlic and ginger paste along with spices; cook for an additional minute.
- Add canned diced tomatoes and bring to a simmer.
- Return browned chicken to skillet; pour in coconut milk or heavy cream.
- Simmer on low heat for about 15-20 minutes until thickened.
