Chicken Tikka Masala

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup plain yogurt
  • 2 tbsp garlic and ginger paste
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk or heavy cream
  • 1 onion, diced
  • 2 tbsp oil (for cooking)
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a large bowl, mix yogurt, garlic and ginger paste, salt, cumin, and garam masala.
  3. Add chicken pieces to the marinade and let soak for at least an hour or overnight in the refrigerator.
  4. Heat oil in a skillet over medium heat.
  5. Add marinated chicken pieces and cook until golden brown on all sides (about 8-10 minutes). Remove from skillet.
  6. In the same skillet, add diced onion and sauté until soft and translucent (about 5 minutes).
  7. Stir in garlic and ginger paste along with spices; cook for an additional minute.
  8. Add canned diced tomatoes and bring to a simmer.
  9. Return browned chicken to skillet; pour in coconut milk or heavy cream.
  10. Simmer on low heat for about 15-20 minutes until thickened.
