  • 34 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup diced tomatoes
  • 2 cups shredded lettuce
  • 1/2 cup sour cream
  • Tortillas (corn or flour)

Instructions

  1. Marinate the chicken breasts in lime juice, cumin, chili powder, salt, and pepper for at least 30 minutes.
  2. Heat a skillet over medium-high heat with olive oil. Add marinated chicken and cook for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  3. Remove the cooked chicken from the skillet and let it rest for a few minutes before shredding it with two forks.
  4. While the chicken rests, warm the tortillas in another skillet or microwave until soft.
  5. Assemble your tacos by placing shredded chicken on warm tortillas and topping with diced tomatoes, shredded lettuce, and a dollop of sour cream.
  6. Serve immediately with extra lime wedges on the side for added zing.
