- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 cup diced tomatoes (fresh or canned)
- 1 ripe avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 8 small corn tortillas or crunchy taco shells
- In a saucepan over medium heat, warm the black beans until heated through. Season with salt and pepper to taste.
- In another pan, add a splash of olive oil over medium heat. Toss in the corn kernels and sauté until slightly charred (about 5 minutes).
- Add diced tomatoes to the sautéed corn and cook on low heat for about 3 minutes.
- Grab your taco shells and layer them starting with a generous scoop of black bean mixture followed by the sweet corn-tomato blend.
- Top with sliced avocado and sprinkle freshly chopped cilantro.
- Drizzle generously with lime juice before serving.
