Creamy Butter Chicken

  • 23 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tsp garam masala
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • 1 tbsp oil (for cooking)
  • 1 medium onion, diced
  • 1 cup tomato puree
  • 1 cup heavy cream

Instructions

  1. In a large bowl, combine yogurt, minced garlic, ginger, garam masala, cumin powder, salt, and pepper. Add chicken pieces and let marinate for at least 30 minutes or overnight.
  2. Heat oil in a skillet over medium-high heat. Add marinated chicken in batches and cook until golden brown on all sides (about 6-8 minutes). Transfer cooked chicken to a plate.
  3. In the same skillet, add more oil if needed and sauté diced onions until translucent (about 5 minutes). Stir in tomato puree along with remaining spices (cumin powder and extra garam masala).
  4. Lower the heat and pour in heavy cream while stirring continuously. Simmer gently for about 10 minutes until thickened.
  5. Return the cooked chicken to the sauce and let simmer on low heat for another few minutes to meld flavors.
  6. Plate your aromatic Butter Chicken with fluffy rice or warm naan on the side.
