  • 34 medium boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 cup marinara sauce (no added sugar or preservatives)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray. Season chicken breasts with salt and pepper.
  2. Set up a breading station: place flour in one bowl, whisked eggs in another, and breadcrumbs in a third bowl.
  3. Coat each chicken breast in flour, dip in egg wash, then roll in breadcrumbs until fully covered. Place on the prepared baking dish.
  4. Bake for 20-25 minutes, until golden brown and cooked through (internal temperature of at least 165°F/74°C).
  5. Remove from oven and spoon marinara sauce generously over each piece of chicken. Top with shredded mozzarella and sprinkle grated Parmesan on top.
  6. Return to oven for an additional 10 minutes, or until cheese is bubbly and slightly golden.
