- 1 cup all-purpose flour
- 2 large eggs, whisked
- 1 cup breadcrumbs (plain or seasoned)
- 1 cup marinara sauce (no added sugar or preservatives)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray. Season chicken breasts with salt and pepper.
- Set up a breading station: place flour in one bowl, whisked eggs in another, and breadcrumbs in a third bowl.
- Coat each chicken breast in flour, dip in egg wash, then roll in breadcrumbs until fully covered. Place on the prepared baking dish.
- Bake for 20-25 minutes, until golden brown and cooked through (internal temperature of at least 165°F/74°C).
- Remove from oven and spoon marinara sauce generously over each piece of chicken. Top with shredded mozzarella and sprinkle grated Parmesan on top.
- Return to oven for an additional 10 minutes, or until cheese is bubbly and slightly golden.
