- 2 tbsp olive oil
- 3–4 cloves fresh garlic, minced
- ½ cup diced onions
- 1 cup heavy cream (or half-and-half)
- 1 cup grated parmesan cheese
- 4 cups baby spinach
- ½ cup oil-packed sun-dried tomatoes, chopped
- 1 tsp dried basil
- 1 tsp dried oregano
- Heat a large skillet over medium-high heat and add olive oil.
- Season chicken with salt and pepper. Sear chicken in the skillet for about 5-7 minutes on each side until golden brown. Remove from pan and set aside.
- In the same skillet, add diced onions and minced garlic; sauté for about two minutes until fragrant.
- Pour in heavy cream while stirring continuously. Add grated parmesan cheese and dried herbs. Simmer for about five minutes until thickened.
- Stir in chopped sun-dried tomatoes and baby spinach; cook until spinach wilts down (about two minutes).
- Return seared chicken to the pan, ensuring it's well-coated in the sauce. Allow to cook on low heat for an additional two minutes.
