Creamy Tuscan Chicken

Creamy Tuscan Chicken is a comforting dish featuring tender chicken breasts in a rich, creamy sauce with sun-dried tomatoes and fresh spinach. Perfect for weeknight dinners or special occasions.

  • 34 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 34 cloves fresh garlic, minced
  • ½ cup diced onions
  • 1 cup heavy cream (or half-and-half)
  • 1 cup grated parmesan cheese
  • 4 cups baby spinach
  • ½ cup oil-packed sun-dried tomatoes, chopped
  • 1 tsp dried basil
  • 1 tsp dried oregano

Instructions

  1. Heat a large skillet over medium-high heat and add olive oil.
  2. Season chicken with salt and pepper. Sear chicken in the skillet for about 5-7 minutes on each side until golden brown. Remove from pan and set aside.
  3. In the same skillet, add diced onions and minced garlic; sauté for about two minutes until fragrant.
  4. Pour in heavy cream while stirring continuously. Add grated parmesan cheese and dried herbs. Simmer for about five minutes until thickened.
  5. Stir in chopped sun-dried tomatoes and baby spinach; cook until spinach wilts down (about two minutes).
  6. Return seared chicken to the pan, ensuring it's well-coated in the sauce. Allow to cook on low heat for an additional two minutes.
