Instructions

  1. Place chicken breasts between two sheets of plastic wrap and gently pound until about 1/2 inch thick for even cooking.
  2. In three shallow dishes, place flour mixed with salt and pepper in one, whisked eggs in another, and breadcrumbs in the last.
  3. Dip each chicken piece into the flour to coat evenly, then into the egg mixture, and finally press into the breadcrumbs to ensure they stick well.
  4. Heat olive oil in a large skillet over medium-high heat. Once hot, add breaded chicken in batches and cook for about 4-5 minutes on each side until golden brown and cooked through.
  5. Transfer cooked chicken cutlets to a plate lined with paper towels to absorb excess oil.
