Crispy Fried Fish

  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 lb fresh fish fillets (cod or tilapia)
  • Oil for frying (vegetable or canola)

Instructions

  1. Pat the fish fillets dry with paper towels.
  2. In a bowl, mix all-purpose flour, cornstarch, salt, and pepper. In another bowl, whisk the eggs until frothy. Place panko breadcrumbs in a third bowl.
  3. Dip each fillet into the flour mixture, coating both sides. Next, dunk it into the egg wash and finally press it into the panko breadcrumbs.
  4. In a large skillet or deep frying pan, heat about half an inch of oil over medium-high heat until shimmering (about 350°F or 175°C).
  5. Carefully place coated fish fillets into the hot oil without overcrowding. Fry each side for about 3-4 minutes until golden brown and crispy.
  6. Transfer fried fish onto paper towels to drain excess oil. Serve immediately with lemon wedges or your favorite dipping sauce.
