  • 1 pound white fish fillets (cod or tilapia)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 6 corn or flour tortillas
  • 2 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • Juice of 1 lime
  • Salt to taste
  • 1/2 cup sour cream or Greek yogurt
  • 1 teaspoon chipotle powder
  • Juice of 1 lime

Instructions

  1. Pat fish fillets dry with a paper towel and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Cook fish for about 3-4 minutes per side until golden brown and flaky.
  3. In a bowl, mix shredded cabbage and carrots. Drizzle with lime juice and sprinkle with salt; toss to combine.
  4. In a small bowl, mix sour cream (or Greek yogurt) with chipotle powder and lime juice until smooth. Adjust seasoning as needed.
  5. Warm tortillas in a dry skillet or microwave until pliable.
  6. Place some flaky fish on each tortilla, top with slaw, drizzle sauce over it, and sprinkle chopped cilantro if desired.
