  • 34 boneless, skinless chicken breasts
  • 45 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese (preferably fresh)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 lb baby potatoes, halved
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a baking dish with nonstick cooking spray.
  2. Wash and halve the baby potatoes. In a large bowl, toss them with olive oil, salt, pepper, and half of the minced garlic. Set aside.
  3. In another bowl, drizzle olive oil over the chicken breasts. Season with Italian seasoning, salt, and pepper. Ensure each piece is well-coated.
  4. Place seasoned potatoes evenly at the bottom of the baking dish. Lay the chicken on top.
  5. Melt butter in a small saucepan over low heat. Stir in remaining garlic until fragrant (about one minute). Remove from heat and mix in grated Parmesan until combined.
  6. Drizzle the sauce over everything in the baking dish. Bake for about 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
  7. Transfer to plates and drizzle any remaining sauce over for added flavor.
