- 4–5 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese (preferably fresh)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 lb baby potatoes, halved
- 2 tbsp unsalted butter
- Preheat your oven to 400°F (200°C). Prepare a baking dish with nonstick cooking spray.
- Wash and halve the baby potatoes. In a large bowl, toss them with olive oil, salt, pepper, and half of the minced garlic. Set aside.
- In another bowl, drizzle olive oil over the chicken breasts. Season with Italian seasoning, salt, and pepper. Ensure each piece is well-coated.
- Place seasoned potatoes evenly at the bottom of the baking dish. Lay the chicken on top.
- Melt butter in a small saucepan over low heat. Stir in remaining garlic until fragrant (about one minute). Remove from heat and mix in grated Parmesan until combined.
- Drizzle the sauce over everything in the baking dish. Bake for about 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
- Transfer to plates and drizzle any remaining sauce over for added flavor.
