- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1/2 cup pure honey
- 1/2 cup BBQ sauce
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt to taste
- 1. Marinate the Chicken: In a bowl, mix honey and BBQ sauce in equal parts. Add garlic powder and paprika. Toss in chicken breasts until well-coated. Let marinate for at least 30 minutes.
- 2. Prepare the Rice: Rinse 1 cup of long-grain white rice under cold water until clear. In a pot over medium heat, combine 2 cups of water (or vegetable broth) with a pinch of salt. Bring to a boil, add rice, lower heat, cover tightly, and cook for about 18 minutes or until fluffy.
- 3. Cook the Chicken: Preheat oven to 375°F (190°C). Spread olive oil on a baking tray. Place marinated chicken on the tray and bake for about 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- 4. Combine Everything: Remove chicken from oven and let rest for five minutes before slicing into bite-sized pieces. Fluff rice with a fork and stir in any remaining marinade from the chicken.
- 5. Serve It Up: Spoon rice onto plates, top with sliced chicken, and drizzle any extra sauce over everything. Garnish with chopped green onions if desired.
