- 3–4 boneless skinless chicken breasts
- 4 cloves fresh garlic, minced
- 2 fresh lemons, zest and juice
- 2 tbsp olive oil
- Salt and pepper to taste
- ¼ cup low-sodium soy sauce
- 1 tsp dried oregano
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season chicken breasts generously with salt and pepper on both sides.
- In a mixing bowl, combine minced garlic, lemon zest, lemon juice, olive oil, soy sauce, oregano, and additional salt and pepper. Mix well.
- Place seasoned chicken in the baking dish and pour the marinade over it. Allow it to marinate for at least 30 minutes.
- Bake marinated chicken in the preheated oven for 25-30 minutes or until cooked through (165°F or higher).
- Serve hot, drizzled with any remaining sauce, and garnish with fresh parsley if desired.
