Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp fresh ginger, minced
  • 4 garlic cloves, minced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil

Instructions

  1. Marinate Your Chicken: In a bowl, whisk together soy sauce, brown sugar, minced garlic, ginger, rice vinegar, and sesame oil. Place chicken in a resealable bag and pour marinade over it. Seal tightly and marinate in the fridge for at least one hour (overnight preferred).
  2. Preheat Grill or Pan: When ready to cook, preheat your grill or large skillet over medium-high heat with a splash of oil to prevent sticking.
  3. Cook the Chicken: Remove chicken from marinade (reserve marinade) and place it on the hot grill or pan. Cook for 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
  4. Thicken the Sauce: While chicken cooks, pour reserved marinade into a saucepan over medium heat. Bring to a simmer and reduce for about 5 minutes until thickened.
  5. Glaze It Up: Brush thickened sauce over each piece of chicken while still on the heat for an additional minute.
  6. Serve It Up: Transfer chicken to plates and drizzle with remaining sauce. Serve alongside steamed rice and veggies for a complete meal.
