Quick Chicken Stir Fry: 15-Minute

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cups broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • Black pepper to taste

Instructions

  1. Slice boneless chicken breasts into thin strips. Chop the bell peppers into bite-sized pieces and separate the broccoli florets.
  2. In a small bowl, combine soy sauce, honey, sesame oil, minced garlic, and black pepper. Whisk until well blended.
  3. Heat a large skillet or wok over medium-high heat. Add 1 tbsp of vegetable oil to the pan. Once heated, add chicken strips.
  4. Cook chicken for about 5-7 minutes until golden brown on all sides while stirring frequently.
  5. Once chicken is cooked through, add sliced bell peppers and broccoli florets. Stir-fry for another 3-4 minutes until vegetables are tender yet crisp.
  6. Pour prepared sauce over stir-fried chicken and vegetables. Cook for an additional minute or two until everything is heated through and well coated.
  7. Transfer to plates and drizzle with any remaining sauce for an extra burst of flavor!
