  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium zucchini, chopped
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. In a small bowl, mix minced garlic with olive oil and Italian seasoning. Rub this mixture over the chicken breasts.
  3. Place seasoned chicken in the prepared dish.
  4. Chop bell peppers and zucchini into bite-sized pieces. Toss them in a bowl with a drizzle of olive oil and a pinch of salt and pepper.
  5. Arrange veggies around the chicken in the baking dish.
  6. Drizzle soy sauce and honey over the chicken and veggies.
  7. Bake for about 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  8. Let rest for five minutes before slicing. Serve immediately or transfer to meal prep containers.
