  • 23 boneless, skinless chicken breasts
  • 2 medium carrots, chopped
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, crushed
  • 6 cups low-sodium chicken broth
  • 3 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Gather and chop all vegetables—carrots, celery, onions—and crush the garlic.
  2. In a large pot over medium heat, add a splash of olive oil. Sauté the chopped onions until translucent, then add the crushed garlic.
  3. Incorporate the boneless chicken breasts into the pot. Season with salt and pepper and sear both sides for about five minutes until browned.
  4. Add the low-sodium chicken broth along with chopped carrots, diced celery, thyme sprigs, and bay leaves.
  5. Bring to a gentle boil. Reduce heat to low, cover the pot, and simmer for about twenty minutes or until chicken is fully cooked.
  6. Carefully remove the cooked chicken from the pot. Shred using two forks and return it to the soup. Stir well before serving.
  7. Ladle soup into bowls and garnish with fresh parsley if desired.
