  • 4 cloves fresh garlic, minced
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup extra virgin olive oil
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Marinate the Chicken: In a large bowl, mix lemon juice, olive oil, minced garlic, oregano, salt, and pepper. Add chicken breasts and coat well. Marinate in the refrigerator for at least one hour.
  2. Preheat Cooking Device: For grilling, preheat your grill to medium-high heat (375°F). For baking, preheat your oven to 400°F (200°C).
  3. Prepare for Cooking: Remove chicken from marinade (reserve marinade). If grilling, place chicken on grill grates. For baking, arrange in a greased baking dish.
  4. Cook the Chicken: Grill each side for about 6-7 minutes until internal temperature reaches at least 165°F (75°C). If baking, cook for roughly 25-30 minutes until golden brown.
  5. Make the Sauce: While chicken cooks, pour reserved marinade into a small saucepan over medium heat. Bring to a simmer and let thicken slightly.
  6. Serve with Flair: Transfer cooked Lemon Chicken to plates. Drizzle with sauce and garnish with fresh parsley or lemon slices.
