  • 34 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix chopped spinach, softened cream cheese, minced garlic, and shredded mozzarella until well combined.
  3. Carefully cut pockets into each chicken breast without slicing all the way through. Season with salt and pepper.
  4. Generously fill each pocket with the spinach mixture. If it spills out, simply tuck it back in.
  5. Place the stuffed chicken in the prepared baking dish. Drizzle with olive oil and cover loosely with foil. Bake for about 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C). Remove foil during the last few minutes for browning.
