- 2 cups fresh spinach, chopped
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- In a bowl, mix chopped spinach, softened cream cheese, minced garlic, and shredded mozzarella until well combined.
- Carefully cut pockets into each chicken breast without slicing all the way through. Season with salt and pepper.
- Generously fill each pocket with the spinach mixture. If it spills out, simply tuck it back in.
- Place the stuffed chicken in the prepared baking dish. Drizzle with olive oil and cover loosely with foil. Bake for about 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C). Remove foil during the last few minutes for browning.
