  • 2 tablespoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder (optional)

Instructions

  1. Cut chicken thighs into bite-sized pieces. Season generously with salt and pepper.
  2. Heat oil in a large skillet over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic and grated ginger; cook until fragrant (about 1 minute).
  3. Pour in canned tomatoes along with garam masala, cumin, turmeric, and chili powder if using. Simmer for about 10 minutes while stirring occasionally.
  4. Add seasoned chicken pieces to the sauce mixture. Stir well to coat all sides of the chicken. Cover partially and cook for about 15 minutes until chicken is cooked through.
  5. Reduce heat and stir in coconut milk or heavy cream. Let it simmer gently for an additional 5 minutes to meld flavors.
  6. Transfer butter chicken to plates, drizzling extra sauce on top. Serve with fluffy basmati rice or warm naan bread for dipping.
