Ingredients

For the Chicken

  • 4 pieces Boneless, skinless chicken breasts use fresh for best results
  • 2 cloves Garlic fresh minced garlic

For the Sauce

  • 1 cup Heavy cream can substitute with coconut cream
  • 1/2 cup Parmesan cheese grated; substitute with nutritional yeast for dairy-free
  • 2 cups Spinach fresh or frozen
  • 1/2 cup Sun-dried tomatoes finely chopped

For Seasoning

  • 1 tablespoon Italian seasoning adjust according to taste
  • to taste Salt
  • to taste Pepper

Optional Garnish

  • 1/4 cup Fresh basil chopped

Instructions

Cooking Directions

  • Start by seasoning the boneless, skinless chicken breasts with salt and pepper.
  • In a large skillet over medium heat, add a splash of oil and sear the chicken for 6-8 minutes on each side until golden brown and cooked through.
  • Using the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream, scraping the bottom of the skillet. Stir in the grated Parmesan cheese until melted.
  • Gently fold in the spinach and chopped sun-dried tomatoes. Cook for 2-3 minutes until the spinach wilts.
  • Return the seared chicken to the skillet, spooning the creamy sauce over each piece. Let it simmer for an additional 2-3 minutes.
  • Plate your creamy Tuscan chicken and garnish with fresh chopped basil. Serve with pasta or crusty bread.

Notes

For best flavor, serve immediately after cooking. Optionally sprinkle with extra Parmesan on top.
