  • 1 tsp Garlic Powder fresh garlic can be used
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • to taste Salt
  • to taste Pepper
  • 1/4 tsp Crushed Red Pepper optional

For the Topping

  • 4 oz Feta Cheese or plant-based cheese for vegan option

How to Make Sheet Pan Gnocchi with Roasted Radishes

  • Preheat your oven to 425°F (218°C) and line a baking sheet with foil, giving it a light spray of nonstick spray for easy cleanup.
  • Prepare the veggies: Wash and slice the radishes and bell peppers, and rinse the grape tomatoes. If your gnocchi is frozen, be sure to separate it gently before cooking.
  • Spread the ingredients: Evenly arrange the gnocchi, radishes, bell peppers, and tomatoes on the baking sheet. Drizzle with olive oil, then sprinkle in garlic powder, dried oregano, basil, salt, pepper, and crushed red pepper, if using.
  • Roast in the preheated oven for 20-25 minutes, tossing everything halfway through. You're looking for crispy gnocchi and tender veggies that have a golden-brown hue.
